Ramadan Cooking: Peri-peri Cornflakes Chicken

It was the last few days of Ramadan, and things were reaaaally slowing down at work.  As I was staring at my laptop screen wondering what work I should do for the day, an email came in from Nando’s with the subject line, “Take PERi-PERi sauce balik kampung this Hari Raya okay!” I clicked on it and found this recipe.  It looked simple enough, and B.I.G. is just right there to get groceries from, so I decided to make it when I got home from work.

I made mine using my air fryer instead of the oven.  I think I cut my chicken a bit too small, so that’s another thing I’d improve on next time.  Super simple and healthy.  Try it out!

Peri-peri Cornflakes Chicken

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup plain flour
  • A pinch of salt and freshly ground black pepper
  • 250g Nando’s Hot Peri-peri sauce
  • 150 grams cornflakes, crushed

Directions

Place the chicken breasts on a chopping board.  Using a mallet, flatten the chicken.

Cut the chicken into strips.

In a bowl, add the flour.  Season with the salt and black pepper.

Working with a few pieces at the time, using one hand (your ‘dry’ hand), drop the chicken strips into the flour.  Toss to coat evenly.

Then, drop the floured chicken strip into a bowl containing the Peri-peri sauce.  Using your other hand (your ‘wet’ hand), toss the chicken until completely covered in sauce.

Then, drop the sauce-coated chicken into a bowl with the crushed cornflakes.  Using your ‘dry’ hand, toss until completely and evenly coated.

Place the chicken strips into the air fryer basket, being careful to not overfill it.

Air-fry at 200 degrees C, 10 minutes.

Serve with more Peri-peri sauce.

    What if we don’t have an air fryer?

      If you don’t have an airfryer, arrange the chicken in a lightly greased baking tray and bake in a normal oven at 220 degrees, 12 to 15 minutes, turning the chicken midway. Hope this helps!
