Breadmaker Calzone Dough

Many years ago I got into a pizza-making craze, and I made many different types of pizzas and calzones almost every weekend. After that other crazes followed, and I just simply stopped making pizzas altogether.

This Ramadan I finally dusted off my old pizza cookbook to make Prawn Panzerotti, a dish I tried many many years ago before I started blogging my cooking adventures. This recipe requires a batch of calzone dough, which I have now modified for making in my Kenwood BM450 breadmaker using the Pizza Dough program.

Breadmaker Burger Buns

It’s been a month since the Movement Control Order (MCO) officially started. I said ‘officially’ because Rudy and I have been on self quarantine since about 10 days before that, after coming back from our trip to Hokkaido.

I had imagined life under lockdown would allow me a lot more opportunities to try out new recipes, but having no real differentiation between work and off hours, this was surprisingly not the case. Getting groceries did get a bit more challenging, though, so MCO became a good opportunity to clear out the freezer and be creative with whatever ingredients you have on hand.

Found turkey, lamb, and wagyu beef patties. Thankfully I have bread flour and butter. Burgers for dinner tonight, then!

Breadmaker Milo Buns

I’ve been putting off making this recipe for a while now, and finally got around to it today. We got a jar of Ovomaltine Crunchy Spread from Tiffany , and I figured a malted chocolate spread would be a great match for these Milo buns. These buns are pillowy soft, and the crunch from the Ovomaltine gave it an amazing contrast of textures. Try it out!

Breadmaker Hokkaido Milk Loaf

On my last trip to Niseko, Hokkaido, we stayed at the nice and homey Yorokobi Lodge, which had a well equipped kitchenette. Seicomart was just down the road, so we could buy basic staples like eggs, cheese, bread, delicious Hokkaido milk and butter to fix our own breakfast. When we somehow still felt like the munchies after whatever huge dinner we had on some particular night, I made grilled cheese sandwiches using yummy Japanese shokupan.

Now that I’m back at home, I’m craving for more shokupan, but we don’t have them here. So naturally I started looking for recipes for homemade shokupan, so that I can make grilled cheese sandwiches again and dream of snowy slopes and our nice, cozy lodge. This loaf is my first try and it turned out nice, but I feel that the texture wasn’t quite there yet. Will keep experimenting.

Updated on Feb 27 2022 – with ingredient quantities suitable for the Panasonic SD-P104WSK breadmaker. Add all the dry ingredients except the yeast to the machine, followed by the egg and milk. Add the yeast into the yeast dispenser, and use the Basic bread setting (Program 1) with a Light crust.

Breadmaker Cheese Bread

Been meaning to make this bread for a while now. I love my Kenwood BM450 breadmaker, and I’ve been trying to push it further and seeing how much versatility I can get from it. I’ve made loaves, pau, and dough for breadrolls, so now I’m going to try making bread loaves with swirly fillings.

Make Your Own: Pau Dough

It’s been a very long time since Kak’mbang and I made pau. Back when we were still living in Terengganu, every so often we would buy boxes of Blue Key flour and make chicken mushroom pau. Kak’mbang made the filling and I was on dough duty. Freshly steamed buns would then be sent to friends and relatives for their afternoon snack.

Pandan Coconut Bread

Been meaning to make this for a while. I used homemade pandan extract using the leaves growing in Mummy’s garden, which wasn’t as strong or aromatic as I’d hoped. I’ll make this again using store-bought extract, and perhaps another time using the water from making the pandan extract in the yukone.

The rolls were very soft and fluffy, and absolutely yummy when enjoyed with kaya. A good idea is to also dip the rolls in kaya and grated coconut, for an extra-indulgent treat.

Breadmaker Brioche

One day I was inspired to make brioche. So many articles and recipes, and many look super complicated or time consuming. Tempting, but not very suitable when I don’t have much time on my hands.

After a few rounds of experimenting with other recipes and modifying them for my Kenwood BM450, I went back to basics and looked at the recipe book that came with my machine. There’s a brioche recipe in there, maybe I should just try this one out? But, would this recipe be inferior to the traditional method?

Then Kak Nia got her own BM450 from the recent Lazada 11.11 sale, and one of her first loaves was the brioche which received raving reviews from her family. That really settled it for me lol.
