Faizal loves a particular spice mix from Flavor God called Dynamite Seasoning. He usually sprinkles generous amounts of it onto chicken wings, then air-fries them. Unfortunately, it seems like this product has been discontinued and no longer available anywhere. So for quite a while, he left the last precious few teaspoons of it untouched, preserving it for the memories.
After we got married, one day when I was wondering what to make for dinner, Faizal suggested I try out the seasoning, and see if I could replicate it. “What an intriguing challenge,” I thought. I made the wings using whatever little that was left of the seasoning, the way he did before. Admittedly, I really skimped on the seasoning. I didn’t have the heart to finish it all off. Perhaps because the chicken was slightly underseasoned, Faizal said they tasted a bit different from what he remembered. Nonetheless, the wings gave me a good picture of what I should aim for.
The Thought Process
The first step was to get a general idea of what the ingredients should be. Thankfully we still had the original bottle, so that was my starting point. A quick Google search for a copycat recipe didn’t yield anything, but I did find a copycat recipe of a different spice mix, called “Everything” Seasoning.
When I compared the list of ingredients of both types side by side, even though they are in differing order, the list of spices seemed almost identical. The only exception was the Ghost Chili Pepper in the Dynamite seasoning, vs the California Chili Pepper in the Everything seasoning. I concluded that this copycat recipe was the best way to start.
Based on my understanding, ingredients listed on any packaging is always sorted by quantity, most to least. So, my next step was to adjust the quantities of the ingredients to mimic that of the Dynamite seasoning. I didn’t have any ghost chili pepper on hand (nor do I want to kill myself consuming one of the hottest chili on the planet), so I substituted with regular chili powder.
Faizal tested the final result, and said this finally took him back to how it was before. Success!
Step by Step
In a medium-sized bowl, add all the ingredients.
Whisk to combine.
Store in an airtight spice jar. Malaysia is humid, so I usually keep any spice mix containing onion or garlic powder in the freezer.
Opt for a spice jar with larger sifter holes, if using. Some of the spices in this mix have larger pieces, and might get left behind in the bottle when sprinkling.
Dynamite Seasoning (Copycat Recipe)
Ingredients
- 1 ½ tablespoons garlic powder
- 1 tablespoon onion powder
- 1 tablespoon chili powder
- 1 tablespoon ground black pepper
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 tablespoon dried basil
- 1 tablespoon dried parsley
- 1 teaspoon sea salt
- 1 teaspoon cayenne pepper
Instructions
- In a medium-sized bowl, add all the ingredients.
- Whisk to combine.

Notes
- If you live in a humid area, I recommend keeping any spice mix containing onion or garlic powder in the freezer, this one included.
